Some recipe ideas...

  1. Ingredients
    • Cake Mix
      • 625g Dan Dairies low, medium, full fat or American style soft cheese
      • 100g sugar
      • 1tsp vanilla essence
      • 2 large eggs
      • 1 level tablespoon cornflour
    • Topping
      • Mix together 140ml soured cream and 1tsp caster sugar
    • Biscuit base
      • Mix together 25g slightly melted butter with 8 crushed digestive biscuits

  2. Method
    • Line tin with baking paper and press down biscuit base
    • Beat sugar, cheese, cornflour and essence together
    • Add well beaten eggs and mix together
    • Cook at 180° for 40 minutes
    • Leave in oven to cool with door slightly open to avoid cracking
    • It should not be runny in the middle - it should be firm
    • When cooled a little, pour over soured cream/sugar mixture
    • Bake at 220° for 5-8 minutes until set
